Ingredients for the broccoli

300 g broccoli florets

70 g sunflower seeds

70 g raisins soaked at least 20’ with 6 tbsp water which is then used
Ingredients for the dressing

70 g cashews, soaked 20′, then rinsed and drained

2 pitted dates soaked 20′ with 3 tbsp water which is then used

20 to 30 g chopped red onion (optional)

1 tbsp apple cider vinegar

¼ tsp salt

pepper to taste

water as needed
Procedure
Wash the broccoli and separate the florets in thin branches by cutting them into slices (the stems can then be steamed for 3’ and cut into slices to be added to any salad or just eaten as a side dish). In a bowl combine the broccoli florets, sunflower seeds and raisins. With a food processor or blender quickly mix the ingredients for the dressing (including the water of dates and raisins and the optional onion) until it becomes a smooth paste; if it’s too thick add 1 tbsp of water at a time until you get a mayonnaise-like consistency. Pour paste over the broccoli, mix well, let stand in the refrigerator at least 1 hour and serve.
