La carne rossa e gli insaccati fanno male
A fine ottobre l’OMS ha dichiarato che la carne rossa e le carni lavorate sono pericolose per la salute aumentando il rischio di cancro in particolare di tumore al colon retto.
L’Agenzia internazionale per la ricerca sul cancro (IARC) di Lione, massima autorità in materia di studio degli agenti cancerogeni e facente parte dell’Organizzazione mondiale della Sanità (OMS), ha inserito le carni rosse e lavorate fra le sostanze che possono causare il cancro negli uomini. Da quanto si legge nella pubblicazione sulla rivista scientifica The Lancet Oncology, il team IARC, costituito da 22 esperti provenienti da 10 paesi, dopo aver revisionato più di 800 studi epidemiologici sull’associazione fra carni rosse e insorgenza di cancro in tutto il mondo, ha deciso di catalogare nel gruppo 1 (fra i cancerogeni certi) «sulla base di sufficienti evidenze che le legano al tumore del colon, le carni rosse lavorate, ovvero quelle che sono state salate, essiccate, fermentate, affumicate o hanno subito altri processi per aumentare il sapore o la durata. E’ stato individuato anche un legame con il tumore allo stomaco». Il consumo di carne rossa (per esempio manzo, maiale, vitello, agnello, montone, cavallo o capra) è stato invece inserito nel gruppo 2 (lista dei probabili cancerogeni per l’uomo), «in considerazione dei numerosi e rilevanti dati che dimostrano un’associazione positiva fra carni rosse e soprattutto cancro al colon, ma anche tumori di pancreas e prostata».
Gli esperti IARC hanno concluso che il pericolo è proporzionale alla quantità di carne consumata. Il rischio di cancro del colon retto aumenta del 18 per cento per ogni porzione di 50 grammi di carne lavorata consumati al giorno e del 17 per cento ogni 100 grammi di carne rossa.
Finalmente agenzie internazionali di questa portata cominciano a pubblicare qualcosa in merito, anche se hanno tanto ancora da diffondere.
